BEEF Mixed 1/4 and 1/2 Bulk Orders
All our beef is processed in a small USDA inspected facility. Kelley Meats in Taberg, Ny who has been doing our processing for about 15 years. Our beef is scheduled for processing 6-12 months ahead of time so dates are fairly firm. It is dry aged for 10-12 days, cut to our standard cut order, cryvac packaged in clear plastic, labelled and flash frozen. We pick up your order at Kelley's, inventory it for correctness and bring to our farm where you pickup and pay the remainder of your balance the day of arranged pickup.
Orders are due by the following dates and meat is ready for pickup 2-3 weeks after that depending on scheduling. We encourage you not to wait until late in the season to pre-order but order during the summer and not miss out.

Cuts you receive will usually include:
Chuck Roast, Rump Roast, stew meat, meaty soup shanks, london broil, tb0ne, porterhouse, rib steaks, sirloin and sirloin tip steaks, ground beef, bones and any organ meat (heart, tongue, liver) you request. Amounts of each cut will vary depending on the size of the 1/4. Usually it's about 1/3 ground beef, 1/3 steaks and 1/3 roasts/stewing cuts. Steaks are either 2 per pkg and 1" thickeness or the larger sirloin and sirloin tips are 1 per pkg and 1" thickness. roasts are usually 2 1/2-3 pound range. Ground beef and stew meat are in 1 pound pkgs.
1/4 beef is a mix of our standard cuts from both the front and rear of the carcass. We use our standard cut sheet and is not customizable for 1/4's. A
Cost: $5.50/pound based on the hanging wt. Hanging wts usually range from 500-650 pounds for whole. The take home meat is not the same as the hanging wt. Take home meat is often about 60% of the hanging wt due to cutting and waste parts. So you can estimate on the lower end to have about 70# for your freezer.

We require a $200 nonrefundable deposit per 1/4 at ordering and the remainder is due at pickup.

We use our standard cut order but there is some options for customizing your order with a 1/2. Things like if you prefer NY strip and tenderloin instead of Tbones and porterhouses, or thicker cuts. Any extra butcher costs above the standard cut order are your responsibility (items like shaved steak have extra costs).
